Dessert Recipes from Yorkshire

Ingredients

Yorkshire Curd Tart

7 oz Riccotta Cheese
2 Eggs
3.5 oz Sugar
3 Eggs
1 Tsp Lemon juice
4 oz Currants
1 Pn Nutmeg
1/4 tsp ground allspice
1 8" prepared pie



Yorkshire Curd Tart is a Yorkshire variation on cheesecake filled with spice, raisins and currants.


This makes a great tea time treat or could be a delicious pudding served warm. Always serve within 24 hours of preparation.

Serves: 6-8
Preparation Time: 20 min.
Cooking Time: 30 min.

Directions


1. Cream together the margarine and sugar.

2. Gently fold in the Riccotta, followed by the currants nutmeg and lemon juice.

3. It helps the mixture if you allow it to sit for about an hour in the refrigerator.

4. When ready to bake, preheat an oven to 390F.

5. Roll out Shortcrust Pastry to line an 8" flan tin or baking dish.

6. Spoon the mixture into the dish.

7. Bake for 25 to 30 minutes
