1. Cream together the margarine and sugar.
2. Gently fold in the Riccotta, followed by the currants nutmeg and lemon juice.
3. It helps the mixture if you allow it to sit for about an hour in the refrigerator.
4. When ready to bake, preheat an oven to 390F.
5. Roll out Shortcrust Pastry to line an 8" flan tin or
baking dish.
6. Spoon the mixture into the dish.
7. Bake for 25 to 30 minutes
