1. Preheat the oven to 425F.
2. Sift flour into
a mixing bowl. To get as much air as possible into the
flour raise the sifter high above the bowl
3. Make a well in
the center of the flour and break the two large eggs into
it.
4. Combine the milk
and water in a jug.
5. To the flour
and eggs, add a pinch of salt and a little black pepper.
6. Using an electric
whisk, begin to beat the eggs and flour together. As the
mix thickens, add the milk/water, beating continuously.
Use a spatula to push in any flour clinging to the edges
of the mixing bowl and beat until all fully mixed to a
creamy batter.
