    8 oz Shortcrust Pastry
    4 Tart Cooking Apples
    2 Tbsp Sugar
    1 Tbsp Sugar Zest of 1 Lemon
    Ground Cloves
    Nutmeg
    Cinnamon



    About Bedfordshire Apple Florentine:

    This is another of those hearty English desserts that have come about with the abundance of really good fruit, especially cooking apples. Served with custard it would be a classic for a Sunday Family Dinner.

    Special Tips & Hints


    1. Preheat the oven to 375F.

    2. Wash, Core and Slice the apples and place into a deep pie dish, sprinkle with the lemon zest and the first 2 Tablespoons of sugar.

    3. Roll out the pastry on a lightly floured surface or Silpat to about one quarter inch thickness.

    4. Heat the ale and season with the spices and the remaining tablespoon of sugar. Experiment with this little to get the seasonings to your personal taste.

    5. Pour the spiced ale over the apples and top with the pastry, crimping the edges to get a good seal. for some extra color to the pastry brush with a little egg wash before baking.

    6. Bake for about 30 minutes until golden and fully cooked. Serve Hot with Custard
