    Caerphilly Cheese & Chive Scones
    8 oz Self Raising Flour
    Salt - Just a pinch
    2 oz Butter
    4 oz Caerphilly cheese, grated
    1 Tbsp Fresh Chives snipped & chopped



    These rich, buttery, cheesy scones, that take full advantage of the rich flavor of Caerphilly cheese, are great for afternoon tea, or topped with a poached egg for a supper dish.

    Caerphilly cheese is a semi-firm white cheese made from raw cow’s milk, and was developed in the region of Caerphilly, Wales, in the early nineteenth century.

    Originally produced as a way for dairy farmers to efficiently expend their excess milk, Caerphilly cheese developed a following that soon made it profitable to produce on its own. The cheese quickle became a traditional favorite of Welsh coal miners, who enjoyed chunks of Caerphilly for lunch. The rind of the cheese protected it from the miners’ dirty hands, and its saltiness supposedly replenished whatever was sweated out by the miners as they labored underground.

    Caerphilly's fantastic flavor has made it popular with gourmets worldwide. Pair it with Viogner, Riesling, or even Chardonnay.

    Special Tips & Hints:

    1. Preheat oven to 375F.

    2. In a large mixing bowl combine the flour and salt then rub in the butter either with fingers (preferred method) or a pastry cutter

    3. Stir in half of the grated cheese and all of the chives.

    4. Add the milk and continue mixing until you have a nice soft dough.

    5. Turn the dough out onto a lightly floured surface and knead quickly for a few minutes until the dough is nice and smooth

    6. Roll the dough out to about 1" thick and cut into about 10 scones using a 2" pastry cutter

    7. Brush the tops of the scones with a little milk and place on a greased baking sheet

    8. Bake for about 10 minutes

    9. Remove from the oven when the tops are golden brown and immediately sprinkle the tops with the remaining Caerphilly cheese
