1. Preheat oven to 350F.
2. Clean and slice the Leeks.
3. Gently fry the leeks in a little margerine until just nicely softened.
4. Toast the bread on one side only and spread a little margerine on the untoasted side. Cut the bread into fingers (Soldiers?). Place about a third of the bread,
toasted side down in the bottom of an ovenproof dish.
5. Layer with one third of the leeks followed by a third of the cheese. Continue layering and finish with cheese on top.
6. Beat togethe the eggs, milk, mustard, cayenne and seasoning and pour over the leek and cheese mixture.
7. Bake for about 45 minutes to 1 hour
until the dish is golden and has risen.
