Preheat oven to 350F
Brush the pastry in the tin with beaten
egg and blind bake the pie pastry for about 20 minutes
Wash and thoroughly clean the leeks and
cut into 1/2" slices
Saute the leeks in a frying pan for about
15 minutes with the bacon and salt..
Drain the leeks when done and combine
with the goats cheese.
In a jug or bowl mix the beaten eggs with
the creme fraiche/cream and salt and pepper.
Spread the leeks and cheese mixture over
the pastry case followed by the chopped spiring onions.
Pour the egg mixture over the top and
cook for 35 minutes or untiul golden brown. Allow to stand
for 10 minuutes when done.
